Amuse Bouche: 
Oscietra caviar, New Turnhout, Belgium, on buckwheat sufa cake, crème fraiche & chives 

Starters (Choice of one): 
Citrus-cured Hamachi tuna, coconut, hibiscus, car acara oranges  -or- Beef tartare (presented tableside), herbed popovers, savora mustard  -or- Boudin Blanc roll, baked leeks, calvados, apple butter  -veg- Kuri-Kuri squash, grilled Treviso, Persimmon, walnuts 

Intermezzo: 
Surryano Ham carved tableside, toasted cristal bread  

Entrees (Choice of one):
