Domaine Serene Brandy is not just another spirit; it is an embodiment of our story at Domaine Serene. With a legacy of producing world-class Pinot Noir and Chardonnay, we carry forward our commitment to quality and believe that this new venture has the potential to match, or even surpass, the great brandies of the world. 

Our Brandy benefits from being sourced from the world's finest vineyards. Domaine Serene has dedicated decades to nurturing and perfecting our vineyards, ensuring that only the finest grapes are selected. These grapes, grown on the best soils and in the ideal microclimates of the Dundee Hills, provide the foundation for our exceptional Brandy.

We employ meticulous techniques and utilize state-of-the-art facilities to ensure that every bottle of Domaine Serene Brandy reaches the pinnacle of quality. After becoming a standard in the industry for our world-class Pinot Noir and Chardonnay we strive to become the new standard for American Brandy.

HARVESTING

At Domaine Serene, our passion for crafting exceptional brandy begins with using our exceptional, award-winning Pinot Noir and Chardonnay grapes.

FERMENTATION

After grapes are delicately hand-selected, our Brandy undergoes a three-week fermentation period to capture the essence of our fresh aromatics. We intentionally employ cold and slow fermentation techniques to draw out the full flavor profile. The sulfur-free process allows for a truly authentic taste experience. Once the juice is fully fermented and dry, it becomes wine, which is transported to our trusted distilling partners.

SMALL BATCH DISTILLATION

We then distill in very small batches, carefully nurturing each individual lot throughout their entire journey. During this meticulous process, we separate each batch, preserving their distinct qualities and characteristics. Pinot Noir and Chardonnay are highly aromatic varietals with complex notes of fruit, spices, and savory characteristics. The type of still we use has a special distillation column that optimizes aromatic compounds throughout this process. This, in combination with an exceptional cooling system, is particularly adept at capturing smooth and fruity aromas.

 MATURATION

Our Domaine Serene Brandy is carefully curated using a combination of used Domaine Serene Pinot Noir barrels, and new cognac spirit barrels. We rotate the barrels to ensure that the brandy interacts with both used and new barrels. This rotation allows for the development of distinct barrel notes, which contribute to the overall flavor profile. The Domaine Serene Pinot Noir barrels primarily provide notes that highlight the influence of the wine, a key aspect for the Brandy. While the spirits barrels are designed to impart new oak aromas, soften the palate and illuminate Brandy's beautiful color. These barrels are made exclusively from 100% French oak sourced from the renowned Limousin Forest.

BLENDING AND PROOFING

At this stage, the Brandy, matured to perfection, stands proudly at cask strength, a testament to its unbridled potency and potential. It is during the subsequent three months that we embark on a gradual journey of refinement, gently proofing the spirit down with water from our very own property in the Dundee Hills.

At Domaine Serene, we take great pride in our vineyards, and our new Brandy product is no exception. Our Brandy is sourced from some of the most iconic vineyards in Oregon, including Côte Sud, Winery Hill, and Triple Crown Vineyards for our Chardonnay Brandy, and Mark Bradford, Jerusalem Hill, Gold Eagle, Fleur de Lis, Winery Hill, Côte Sud, and Two Barns Vineyards for our Pinot Noir Brandy.

What sets Domaine Serene Brandy apart is our unique blend of vineyards, varying from year to year, and carefully selected for their individual character and quality. Our winemakers bring a wealth of expertise and experience to the blending process, ensuring that every bottle of Domaine Serene Brandy is a true showcase of the finest vineyards of the region.

Domaine Serene Pinot Noir Brandy - $75

Tasting experiences will be available at all Domaine Serene locations in the future. For now, tasters of Brandy are available for purchase at all locations beginning July 1st.

Our Chardonnay Brandy is sourced from Côte Sud, Winery Hill, and Triple Crown Vineyards. Our Pinot Noir Brandy is sourced from Mark Bradford, Jerusalem Hill, Gold Eagle, Fleur de Lis, Winery Hill, Côte Sud, and Two Barns Vineyards.

VSOP stands for "Very Superior Old Pale," denoting that our blend includes spirits aged for a minimum of four years in oak barrels, enriching it with depth and complexity. This extended aging process infuses our brandy with nuanced notes of fruit and oak, yielding a refined and sophisticated product. Domaine Serene Brandy's "VSOP" label guarantees its quality and reflects our meticulous production, delivering a premium spirit with a smoother, more harmonious taste.
